⁣Cream of Corn Soup
Ingredients (serves 4)
- 3 ears of corn (boiled)
-1/2 cup cashews, soaked overnight, drained and rinsed
- 3 medium size tomatoes (use yellow tomatoes if you can find, they will lend a golden color to the soup!)
- 1 large yellow pepper
- 1 onion
- 1 garlic clove
- 1 teaspoon turmeric
- 3 Tablespoons extra virgin olive oil
- 1/2 lemon, juiced, or more, to taste
- 1/2 cup - 1 cup water
- pink Himalayan salt (or sea salt) and freshly ground pepper
- 1/2 avocado, sliced, to garnish
- a few sprigs of mint (or other herb of your choice), to garnish

Cut the kernels off the cob and place in a large bowl. Add in the diced tomatoes, pepper, onion and mashed garlic. Season with salt and pepper, stir and allow to sit for 30 minutes, for the flavors to combine. Place the corn mixture in a blender, add in the turmeric, olive oil, lemon juice, water and blend until smooth. Taste and adjust the seasonings. Pour into bowls and garnish with the avocado slices and fresh mint. Enjoy!
